So, I decided to tweak some of my mom’s recipes and make a vegan version of Maryland cookies. The best part? They taste just like the original ones we used to love, with the same great flavour and texture.

  • Ground flax seeds
  • Water
  • Vegan butter
  • Sugar
  • Light brown sugar
  • Flour
  • Baking soda
  • Salt
  • Shredded coconut
  • Chocolate chips

  1. Prepare the flax egg by putting ground flax seeds in a small bowl.  Add water and stir. Let it sit for about 10 minutes or until it is thick.
  2. In a stand mixer, add the vegan butter, sugar and light brown sugar and whisk until light and airy.
  3. Ad the rest of the ingredients and mix well.
  4. Take the dough out of the stand mixer and place it on a clean tabletop. Knead into a sausage shape with your hands. The heat from your hands will help the dough come together.
  5. Cut into little even pieces and place on a parchment-lined baking tray, allowing some space between cookies for a little spreading.
  6. Bake at 180°C for 10-12 minutes
