Classic chocolate chip cookies. Be prepared to be impressed by these vegan, crunchy, delicious Maryland-style cookies. A true family favourite!
A vegan family treat
For nearly six years, my family tried a plant-based diet. It was an interesting experiment, but now we’re back to eating a standard diet (but that’s a story for another time). One thing we missed during our plant-based phase was simple treats like Maryland cookies—the kind you take camping or enjoy at home. So, I decided to tweak some of my mom’s recipes and make a vegan version of Maryland cookies. The best part? They taste just like the original ones we used to love, with the same great flavour and texture.
So easy even kids can bake them
These cookies are a breeze to make – my kids have been baking them for years! With only a handful of ingredients, this recipe is tailor-made for young chefs who love getting hands-on in the kitchen. From mixing the dough to shaping the cookies and eagerly watching them bake to a beautiful golden brown, every step is an exciting adventure. This enjoyable activity not only fills the kitchen with delicious aromas but also ends with a delightful reward: a batch of scrumptious cookies ready to be shared with family and friends. So, roll up your sleeves, gather the little ones, and prepare for a baking extravaganza filled with laughter, learning, and mouthwatering treats!

Ingredients
Instructions
-
Prepare the flax egg by putting ground flax seeds in a small bowl. Add water and stir. Let it sit for about 10 minutes or until it is thick.
-
In a stand mixer, add the vegan butter, sugar and light brown sugar and whisk until light and airy.
-
Ad the rest of the ingredients and mix well.
-
Take the dough out of the stand mixer and place it on a clean tabletop. Knead into a sausage shape with your hands. The heat from your hands will help the dough come together.
-
Cut into little even pieces and place on a parchment-lined baking tray, allowing some space between cookies for a little spreading.
-
Bake at 180°C for 10-12 minutes
