Vegan and Gluten-free Greek Style Koftas

These vegan and gluten-free Greek-style Koftas are the perfect summer BBQ recipe. They're quick and easy to make and amazingly fragrant and delicious!

Vegan and gluten-free Greek style Koftas are so much easier to make than I thought. And, with a little help from the Meatless Farm Co., they are a breeze. Nope, not an advertisement, I just love sharing great finds in the supermarket. Therefore, I share with you the products I use in the recipes. The meat-free mince is perfect to make all kinds of meatballs or Koftas as you can form the mince whichever way you like. These Koftas are bursting with flavor, exotic and fragrant. Perfect for a weekend BBQ with friends or as a family meal.

I'm still experimenting with gluten-free food. While I'm not 100% gluten-free myself, my daughter is trying to be completely gluten-free. She is doing so well. On the other hand, I'm just trying my best. With that said, I do miss baking sweet and lovely cakes and cupcakes. However, with trying to be gluten- and sugar-free I will have to bake those as an occasional treat.

What are koftas?

Koftas are a part of the meatball family of meatball or meatloaf dishes. They are usually meat-based and found in Cuisines such as Indian, Middle Eastern, Balkan or Central Asian. However, in Greek and Cyprian cuisine Koftas are often made vegetarian and then called hortoketfedes and often eaten during fasting periods such as Lent.

  • Meatless mince
  • Red onion
  • Garlic
  • Pistachio nuts
  • Seasoning - Salt and pepper, red chilli flakes, coriander seeds, cumin seeds,
  • Fresh herbs - Mint, rosemary

Ingredients
  • 400 g Meatless mince
  • 1/2 Red onion (finely chopped)
  • 1 Garlic clove (crushed)
  • 1/4 cup Pistachio nuts
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Red chilli flakes
  • 1 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 10 g Fresh mint
  • 10 g Fresh rosemary
Instructions

    First of all, get all your ingredients ready, this always makes the preparation easier.

    Start by grinding up the cumin seeds and the coriander seeds. You can do this in a mortar or a food processor.

    Add the pistachios. If you are using a food processor you can just chuck everything in there and grind the seeds and nuts at the same time.

    Add all the herbs, spices, onion and the pressed garlic to the vegan mince.

    Now comes the fun part. Mix everything together. You can use a spoon but its definitely more fun to do it by hand.

    Ok, bring on the jokes! We're all thinking about it! But trust me, this will be very delicious. Form the dough around the stick with your hands. Make sure they are a bit tight, as they might try to fall apart on the BBQ.

    When you've formed all your koftas, stick them in the fridge for about 30 minutes.

    Grill the koftas on a BBQ for about 5-10 minute each side. This is basically just to cook the onion and heat the koftas, and to get fun griddle marks on them as well.

    We enjoyed our koftas with home-made tzatziki sauce, salad, bread, and some antipasti stuff like olives, artichokes, sundried tomatoes.
