I'm still experimenting with gluten-free food. While I'm not 100% gluten-free myself, my daughter is trying to be completely gluten-free. She is doing so well. On the other hand, I'm just trying my best. With that said, I do miss baking sweet and lovely cakes and cupcakes. Koftas are a part of the meatball family of meatball or meatloaf dishes. They are usually meat-based and found in Cuisines such as Indian, Middle Eastern, Balkan or Central Asian. However, in Greek and Cyprian cuisine Koftas are often made vegetarian and then called hortoketfedes and often eaten during fasting periods such as Lent.
