Heat the olive oil in a pan and add the onion. Sauté the onions until they are soft. Add the diced pepper and continue to sauté.
Add the mixed frozen vegetables and cook until hot through.
Set the vegetables aside and cook the vegan chicken pieces until cooked through. Add about 1-2 tsp of cajun seasoning (link again) to flavor the chicken pieces.
Combine the cooked rice, cooked vegetables, and vegan chicken pieces in the pan and add the vegan beef stock. Add 2-3 tablespoons of the Cajun Seasoning (link again) and toss everything together and heat until piping hot.
