  • Sugar - I prefer caster sugar, as it dissolves quicker
  • Eggs - Eggs supply stability and structure, as well as a tender texture. You’ll need 2 large eggs for this.
  • Oil – For baking I prefer vegetable oil, you could also use melted butter if that's your jam.
  • Plain flour – just some normal flour for me thanks
  • Cinnamon - provides the best undertone to combine all the flavours together
  • Baking powder - will work together with the eggs to make the bread rise
  • Porridge oats - purely for decoration
  • Vanilla extract - to complete the flavour

Ingredients
  • 2 dl Sugar
  • 2 Eggs
  • 3 dl Plain flour
  • 2 tsp Baking powder
  • 2 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 1/2 dl Vegetable oil
  • 2-3 Ripe bananas
Instructions
  1. 1. Preheat oven to 170°C.
  2. 2. Beat eggs and sugar until fluffy.
  3. 3. Mash bananas.
  4. 4. Mix in flour, baking powder, cinnamon, oil, and vanilla.
  5. 5. Add the mashed bananas.

  6. 6. Transfer to a lined baking tin.
  7. 7. Top with a sliced banana and oats.
  8. 8. Bake for 45-60 mins until golden brown.
